Joël Robuchon, named “Chef of the Century” by Gault & Millau in 1989, built his entire legacy around this vision. He constantly reminded us that the role of a chef is to elevate each ingredient, to avoid waste, and to honor food by transforming it into an unforgettable experience.

For him, wasting food was never just uneconomical or unsustainable : it was a lack of love.
